Wood chips are used for indirect smoking of food. They are used in gas grills or can be placed directly on hot charcoal in grills designed for this purpose. These chips are particularly suitable for grilling poultry, pork, lamb, and beef.
They are most effective when soaked in water (for at least 20 minutes). This increases their volume and makes them last longer. When soaked in juice, wine, or beer, for example, they release the pleasant aroma of the beverage.
Mesquite is a tree native to Mexico and North America. Its wood is very hard and, when used for grilling, burns for a long time and reaches high temperatures.
